INGREDIENTS
FOR RAW PIE CRUST
- 1 cup raw almonds
- 1 cup pecans
- 1/3 cup cacao was powder
- 1/2 tsp cinnamon
- 1 tsp this vanilla extract
- 1 cup dates soaked
SHAKEOLOGY CHOCOLATE MOUSSE
- 2 scoops chocolate shakeology
- 2 ripe Hass avocados
- 1 large ripe banana cut into chunks
- 2/3 cup of 70% cacao chocolate chips
- 3 Tbsp cacao powder
- 1 1/2 tsp vanilla extract
- 1/2 cup honey or raw maple syrup
- 1/2 tsp sea salt
- 4 to 5 Tbsp almond milk or cashew milk
PREPARATION
FOR RAW PIE CRUST
- Add your dates to a medium-size bowl and cover with boiling water to soften, for about 5 to 6 minutes.
- While the dates are soaking in boiling water add the almonds and pecans to the food processor and process until completely broken down.
- Drain your dates well and add them to the food processor with the rest of the pie crust ingredients.
- Process everything in the food processor stopping once or twice to scrape down the sides of your food processor to ensure even texture.
- Spread your pie crust mixture evenly into your pie plate, and up the sides as well. Start pressing the pie crust mixture with your hands, starting on the bottom at the base of the pie plate and work your way up the sides until it is even.
- After molding pie crust into a pan, chill in the refrigerator for 20 minutes while you prepare the Shakeology chocolate mousse.
SHAKEOLOGY CHOCOLATE MOUSSE
- In a large bowl set over a pot of simmering hot water, melt the chocolate and stir it until completely smooth. Set a side.
- In your food processor or blender, combine the avocados, bananas, chocolate shakeology, cacao powder, honey, vanilla extract and salt. Process on medium until mixture is combined.
- Add cashew milk, 1 tablespoon at a time, until all avocado and banana chunks are blended and the mixture is smooth and creamy.
- Slowly pour the melted chocolate into the blender with other ingredients and blend again until smooth.
- Spread or pipe chocolate mousse into your pie crust.
- Top with berries, coconut, shaved chocolate or toppings of choice.
- Refrigerate pie for 30 minutes and enjoy.
